The way I understand it gluten causes inflammation in the intestines which disallows proper digestion of foods and a lack of absorption of proper nutrients, vitamins and minerals. This causes all sorts of problems. Gluten isn't just in wheat. There are other types.
Update: I am now convinced most gluten problems in the USA are caused by the way foods are grown and processed. GMOs, fertilizers, pesticides, etc. are the problem and not the gluten. Why do I say that? I happened to research the subject after posting this originally on the ronstadt forum and discovered time after time people have posted that their gluten problem disappeared while they were in Europe. Europeans grow and process their foods closer to organic than the chemical laden foods you find here in the states. To add insult to injury all those pesticides and fertilizers get washed into rivers and into the ocean. They are killing coral reefs and creating dead zones in the ocean. The ocean is the LUNGS of the world. When such large areas are destroyed expect things like global warming and climate change to happen.
