Sonoran cheese broth

Multi-platform artist Linda Ronstadt is the author of a new book , Feels Like Home: A Song for the Sonoran Borderlands . The book, co-written with journalist Lawrence Downes, focuses on the emotional and physical landscape of Ronstadt's childhood in the American Southwest, as well as her Mexican heritage and the connections between the two countries. What follows is a story, as well as recipes adapted from the book:
This soup embodies what I love about Sonoran cuisine: it's deliciously simple. You can find queso fresco at your local Latino grocery store.
Makes about 10 servings
3 tablespoons vegetable oil
3 medium potatoes peeled and cut into cubes
1 medium white onion, cut into cubes
1 medium tomato, diced
5 green Anaheim chiles (also called New Mexico chiles or California chiles), roasted, peeled, and sliced
1 teaspoon salt (or to taste)
6 cups of chicken broth (preferably homemade)
1 cup of milk
8 ounces fresh cheese, cut into cubes
Salt and pepper to taste
Flour tortillas, for serving
Chiltepin peppers, to decorate
• In a large cast-iron pot or heavy-bottomed stockpot, heat oil over medium heat. Add the potatoes and onion and cook, stirring, until the onion is soft, about 4 minutes. Add tomato, Anaheim chiles and salt; cook for another 5 minutes.
• Add broth and simmer until potatoes are tender, then reduce heat to low. Slowly add the milk.
• To serve, place a few queso fresco cubes in each bowl and pour the soup over them, or add all the cheese to the pot and stir over low heat. Add salt and pepper. Serve the soup hot with warmed flour tortillas. Garnish with chiltepin chiles.
Nutrients per serving: 180 calories, 6 g protein, 14 g carbohydrates, 2 g fiber, 11 g fat, 20 mg cholesterol, 1,050 mg sodium
